Main Barbecue Contest:
Judging Schedule:
- Sunday, January 12th (Morning)
- Chicken: 9:00 AM
- Ribs: 10:00 AM
- Pork: 11:00 AM
- Brisket: 12:00 PM
Judging Process:
- Turn-in Procedure: Teams must submit their food to a designated area at the assigned time. Each team will be given a number, and their Styrofoam container will be labeled accordingly. A staff member will deliver the boxes to the judges.
- Blind Judging: The judges will not know which team’s food they are evaluating.
- Judging Criteria:
- Presentation
- Taste/Flavor
- Tenderness/Texture
- Disqualification: Any food turned in after the scheduled time will be disqualified.
Competitor Participation:
- All competitors must sell food to the public for both festival days.
- Vendors are charged a 15% fee on total sales after the event on Sunday. Teams must provide sales reports.
Additional Details:
- This competition is open to all skill levels, with approximately 16-20 teams participating.
- Competitors will prepare 6 servings of each meat for the judges. (i.e. 6 slices of brisket)
- Competitors may begin setting up at 9:00 AM on Friday, January 10th. Teams may stay onsite overnight to prepare food but are not required to do so.
- Teams may sell soft drinks, water, side dishes, sauces and swag.
- Meat will not be inspected.
- Teams will be provided with a 20x20 space to work with.
- Food sales will shut down at 6:00 PM – 6:30 PM on Sunday for the winners' announcement.
Main Contest Entry Fee & Payout Structure:
Entry Fee:
- $300 Buy-in per Team (covers all categories)
Payout Structure:
- Grand Champion: 40% of the total prize pool + Award
- Category Winners (Brisket, Ribs, Chicken, Pulled Pork): Each category winner will receive 15% of the total prize pool + Award
Brisket Bay VIP Showdown:
VIP Brisket Competition Details:
- Teams MUST Participate
- Takes place on both Saturday & Sunday.
- Teams will turn in one full, uncut packer brisket at 11:30 AM on Saturday and 12:30 PM on Sunday.
- No cost to enter the VIP Brisket Competition.
- Volunteers will prepare and pass out brisket samples to VIP attendees in the VIP area.
VIP Brisket Payout:
- The winner will receive a $500 payout + Award.
